Friday, our truffle hunting
border collie
When December rolls around, there are two very busy dogs, Friday and Dazy.
Friday (named after Sgt. Joe Friday of the old "Dragnet" television series) is the farms' Border Collie truffle hunting dog.
Border Collies are traditionally used for herding livestock. However, here on Keep Your Fork Farm, Jane has trained her farm dog to sniff out the coveted truffles in her orchard.
Truffle Trifecta 2013
On February 23, 2013, Jane Smith hosted the second annual Truffle Trifecta to an intimate gathering of truffle enthusiasts.
Thank you to Chef Susi Gott Séguret and Chef Harrison Littell (Five Loaves Catering) for the heavenly truffle-inspired courses.
Among the guests was Michael Hastings, writer from the Winston-Salem Journal, who wrote about the event, Benefit dinner highlights truffles in new, unusual ways.

About Chef Susi Gott Séguret
Susi Gott Séguret, CCP has been intimately involved with food and flavor since, as a toddler she first felt the burn of a radish, just pulled from the soil, still speckled with black earth. This intrigue grew during early years of organically farming all the ingredients that graced the family plate, from honey to duck eggs to pig’s tongue to home-brewed beer.
Susi spearheads the Seasonal School of Culinary Arts in Asheville. Sessions have now spread to Ithaca, Sonoma and Paris as well, and incorporate local chefs, local ingredients, and local brews in each destination.
Susi holds a diploma in Gastronomy from the Cordon Bleu and the Université de Reims, a degree in Environmental Studies from Warren Wilson College, and is a Certified Culinary Professional through the IACP, where she serves as Chair of Regional Conferences and Grassroots Events.
Passionate about elements of taste and style, and how they extend from our palate into our daily lives, Susi strives to blend music, food, words and images into a tapestry for the senses, which she shares generously with all who cross her path.
